You can enjoy our ciders naturally cloudy by turning the bottle upside down before pouring them or clear, by carefully pouring them. We recommend matching them with risotto, cheeses, poultry, baked potatoes, vegetable plates, dry pastries as well as sweet dishes; there are no limits to how creative you can be!

 

 

 

Apple - Cider

 

This cider is produced out of a blend of juices stemming from Pilot, Topaz and Gold Rush apples. What makes the mature apples of these varieties so special are their combined high sweetness and acidity. Moreover, the tannins of these apples are more perceptible than in most other classic dessert apple varieties. Of course, we produce our apple cider in such a way that the strength of character of the apple varieties we use is fully reflected in the final product.

The crispy apple smell of this clear yellow cider is further enhanced by the bubbliness resulting from the fermentation process, Its body releases a delicate acidity, a slight residual sweetness as well as a highly perceptible flavour of ripe apples. The whole is rounded off by a harmonic aftertaste.

Elderflower - Cider

 

Traditionally, South Tyrolean farmers used to produce and consume an "elderflower-wine" during elderflower's blossom. The effort to transform this short-lived beverage into something more lasting gave birth to our bottle-fermented elderflower cider.

Together, the apple and the elderflower yield a sparkling cider that is full of life, with a delicate aromatic note. The floral component of the elderflower is dominant in the nose, while in the mouth its flavour is mostly characterised by a tender apple note.

Quince - Cider

 

In this cider, both quince and apple flavours are perceptible next to one another. Its bright yellow colour is reminiscent of ripe quinces. Its unique sweet fragrance complements the bouquet of the apples. In the mouth, the tanning agents of the quince together with the apple flavour give a tangy taste that is amplified by a natural perlage. The aftertaste is persistent.

Ginger Cider

 

Long known for its fragrant spiciness and its association to Asian cuisine, ginger is nowadays used as a prime ingredient in many parts of the world and has recently found its way into the European culinary culture.

During the production process of this cider, the apple must acquire a fruity spiciness and a slightly reddish glimmer. The apples' scent is enriched by a crispy lemony nuance. Additionally, its flavour is characterised by an exotic touch that takes the form of warm citrus-like sharpness.

Our ginger cider pairs well with poultry, fish, seafood and especially Asian dishes.
